Serves 4
Ingredients:
- 1 chicken, quartered
- 1 tbsp dried rosemary
- 8 cloves garlic
- Salt, pepper
- 1 sliced lemon
- ½ cp white wine
- ⅓ cp olive oil
Directions:
Preheat oven to 425 degrees F
Line medium-size baking pan with chicken
Sprinkle rosemary on top of chicken
Crush and sprinkle 2 garlic cloves over chicken
Season with salt and pepper
Slice remaining garlic into ¼ inch slices and place around chicken
Drizzle wine and olive oil over chicken
Cover and bake 1 ½ hours for bottoms, 40 minutes for whole chicken pieces
Uncover chicken and roast for another 15 min, until golden brown
Serve with gravy and lemon/garlic slices
